Our Sweet Story

 
 

Long ago on a sweetgrass covered dune...

The story of Sweetgrass begins when co-founders Nicole and Nathan Hynes were on the hunt for the perfect food pairing beer. As owners of one of Toronto's neighbourhood haunts,  The Auld Spot Pub, they are an ever present fixture in their Danforth community and the Toronto food scene. Nathan is a foodie.  But to establish their Toronto based beer company, their journey began during one of their regular summer excursions to the remote sand dunes of Christian Island, tucked away in the heart of Georgian Bay.

For years, the couple had carved out time each summer to refresh and reconnect, always heading to Christian Island. It's the kind of place where electricity only just arrived, where the stars are immeasurable at night, and some of the best Ontario sunsets can be found. Enjoying the late summer evenings, they learned to cook together over an open fire, testing new recipes and generally enjoying the refuge these trips provided their family.

It was during these cookouts that Nicole and Nathan realized they had never felt satisfied with the beer they had to pair with their dishes. Much like the difficult journey that's required to reach their little slice of Christian Island, their search for the perfect food pairing beer seemed equally challenging. That is until they decided to go about building a recipe for what is now known as the Sweetgrass Golden Ale.

Soft and elegant, with a gentle sweetness, Nicole and Nathan deliberated at length, what to call their golden ale, until they sat on the dunes to enjoy one of the picturesque sunsets with their two year old son, and were over whelmed by the scent of Sweetgrass that surrounded them. Given Nathan's First Nation heritage, they were overjoyed by the thought of using such a sacred plant to represent their product; a plant that embodies love, kindness and honesty when three strands are braided together in unity.

Fast forward a few years and you can find Nicole putting her natural #girlboss swagger to use. Focused on expanding the Sweetgrass brand, she's never too busy to connect, always ensuring Sweetgrass' personal touch. On the flip side, Nathan's palate is used extensively when developing recipes, brewing new batches, and sourcing new products to always ensure every sip is a quality guarantee. Together they make Sweetgrass, and they hope you enjoy the journey as much as they do.
